Non-alcoholic recipe

Winter Conservatory

Pear nectar and sage settle into a mellow rooibos base, with lemon keeping this quiet winter sour lively.

Ingredients

  • 90 ml chilled pasteurized pear nectar
  • 20 ml fresh lemon juice
  • 15 ml sage syrup (1:1 sugar:water by weight)
  • 60 ml chilled plain rooibos tea

Preparation

Steep 2 g plain rooibos in 250 ml water at about 95°C for 5 minutes; strain and chill. For sage syrup, dissolve 100 g sugar in 100 g water, add 3 g washed fresh culinary sage off heat, cover 5 minutes, strain and chill. Shake 90 ml pear nectar, 20 ml lemon juice, 15 ml sage syrup and 60 ml rooibos with ice for 10 seconds. Fine-strain into a double rocks glass over one large ice cube. Garnish with a thin pear fan and a small culinary sage leaf.

Glassware

Double rocks glass over one large cube

Garnish

1 thin pear fan and 1 small culinary sage leaf

History

Published recipes separately combine rooibos with pear and pear with culinary sage. This measured pear–sage–rooibos recipe is a Mixology house-style proposal, not a documented historic drink; no claim of unique invention is made.

Mixology View

Rooibos brings a rounded, almost woody backdrop without the caffeine of true tea. Pear nectar supplies texture, while sage should remain subtle: too much would make the drink taste medicinal instead of orchard-fresh.

Ingredient note

Use culinary sage, not essential oils or ornamental leaves. Wash the pear garnish and keep prepared ingredients chilled.
