Non-alcoholic recipe
Watermelon Mint Cooler
Fresh watermelon juice, lime and mint syrup give this lightly sparkling summer drink a clean, juicy finish.
Ingredients
- 120 ml freshly strained chilled watermelon juice
- 20 ml fresh lime juice
- 15 ml mint syrup (1:1 sugar-water base)
- 45 ml chilled plain soda water
Preparation
Before cutting the watermelon, scrub the whole rind under cool running water with a clean produce brush. Remove rind and seeds, blend fresh flesh briefly, strain and measure 120 ml chilled juice. For mint syrup, dissolve 100 g white sugar in 100 g water; remove from heat, add 10 g rinsed mint leaves, steep covered for 5 minutes, strain and chill. Stir 120 ml watermelon juice, 20 ml lime juice and 15 ml cold mint syrup with ice, strain into a highball over fresh ice, top with 45 ml soda water and stir once. Garnish with a small seedless watermelon triangle and a mint sprig.
Glassware
Highball glass with cubed ice
Garnish
1 small seedless watermelon triangle and 1 fresh mint sprig
History
Published watermelon-and-mint mocktails combine the fruit, herb and sparkling water. This Mixology formula specifies freshly strained watermelon juice, lime and weighed mint syrup instead of treating the pairing as an original invention. No first creator or date for this exact ratio was verified.
Mixology View
A modest soda measure preserves watermelon as the leading flavour. The mint syrup is specified by weight for repeatability, but the final sweetness depends on the fruit and has not been tasted.
Ingredient note
Wash the watermelon rind before cutting, keep cut fruit refrigerated and serve fresh juice promptly. The freshly extracted juice is unpasteurized; higher-risk consumers should avoid untreated juice and choose a separately specified pasteurized alternative.
