Non-alcoholic recipe

The Greenhouse

Cool cucumber and crisp green apple are lifted by lime and a measured hint of basil.

Ingredients

  • 60 ml freshly pressed cucumber juice
  • 60 ml chilled pasteurized unsweetened green apple juice
  • 20 ml fresh lime juice
  • 15 ml basil syrup (1:1 sugar:water by weight)

Preparation

For basil syrup, dissolve 100 g sugar in 100 g water, add 10 g washed culinary basil off heat, cover 10 minutes, strain and chill. Wash and juice cucumber, fine-strain and measure 60 ml. Shake the cucumber juice, 60 ml green apple juice, 20 ml lime juice and 15 ml basil syrup with ice for 10 seconds. Fine-strain into a double rocks glass over fresh ice. Garnish with a cucumber ribbon and a small basil leaf.

Glassware

Double rocks glass over cubed ice

Garnish

1 long cucumber ribbon and 1 small basil leaf

History

Carolyn Pascual published a cucumber–green-apple–basil–lime Green Dream mocktail in 2025, and SodaStream also publishes a cucumber–apple–basil drink. The Mixology formula uses measured juices and basil syrup rather than their respective methods. It is a house interpretation, not an invented ingredient pairing.

Mixology View

The Greenhouse works when the apple supplies acidity and fruit while cucumber keeps the drink clean. Basil should be an aroma, not the dominant taste; a fine strain also prevents pulpy texture from muddying the presentation.

Ingredient note

Fresh cucumber juice is unpasteurized. Prepare hygienically and serve promptly; higher-risk consumers should avoid untreated juices.
