Non-alcoholic recipe
Apricot Chamomile Hour
Apricot nectar and chilled chamomile meet fresh lemon and a little honey in a fragrant, gently tart coupe.

- 75 ml chilled chamomile tea (2 g chamomile per 250 ml water; see method)
- 60 ml apricot nectar

History
Published non-alcoholic drinks already pair chamomile with lemon and honey, while apricot-lemon-honey tea recipes also exist. This apricot–chamomile measured sour is a Mixology house-style proposal; no historic creator, first-use date or exclusive invention is claimed.
Mixology View
Chamomile can disappear behind apricot nectar if brewed too weakly. Keep the tea clear and fully chilled, then let lemon supply the definition; this balance is a desk estimate, not a physical tasting.
Ingredient note
Contains honey and chamomile. Chamomile may cause allergic reactions, particularly in people allergic to ragweed or related daisy-family plants; check with a healthcare professional if you take medicines that may interact with chamomile. Avoid chamomile tea during pregnancy. Do not serve honey-containing drinks to infants under 12 months.
