Non-alcoholic recipe
Strawberry Thyme Tea Fizz
Strawberry purée, delicate white tea, lemon and thyme become a lightly sparkling, aromatic garden-style refresher.
Ingredients
- 50 ml smooth strained strawberry puree
- 60 ml chilled white tea
- 20 ml fresh lemon juice
- 15 ml thyme syrup (1:1 sugar:water by weight)
- 45 ml chilled soda water
Preparation
Steep 2 g plain white tea in 250 ml water at about 75°C for 3 minutes; strain and chill. For thyme syrup, dissolve 100 g sugar in 100 g water, add 3 g washed culinary thyme off heat, cover 5 minutes, strain and chill. Press washed strawberries through a sieve and measure 50 ml smooth puree. Shake 50 ml strawberry purée, 60 ml tea, 20 ml lemon juice and 15 ml thyme syrup with ice for 10 seconds. Fine-strain into a wine glass over ice, add 45 ml chilled soda water and stir once. Garnish with a strawberry and short thyme sprig.
Glassware
Wine glass over cubed ice
Garnish
1 small strawberry and 1 short thyme sprig
History
Strawberry, lemon and thyme appear in existing non-alcoholic infusions, and thyme-syrup spritzes are established. This Mixology recipe combines them with measured white tea and strawberry purée; no documented historical creator or exclusive originality is asserted.
Mixology View
The tea should support the strawberry without adding bitterness, and thyme should be aromatic rather than medicinal. Fine-strain the purée, add soda after shaking and serve immediately. Expected flavour only; not physically tasted.
Ingredient note
White tea contains caffeine. Wash strawberries and thyme, and keep prepared fruit purée chilled.
