Grapefruit Rosemary Spritz
Pink grapefruit and lemon give this rosemary-scented spritz a brisk citrus edge and gentle bitterness.
Ingredients
- 90 ml chilled pink grapefruit juice
- 15 ml rosemary syrup (1:1 sugar-water base)
- 10 ml fresh lemon juice
- 90 ml chilled plain soda water
Preparation
Make rosemary syrup by dissolving 100 g white sugar in 100 g water, adding 3 g rinsed fresh rosemary, steeping off heat for 7 minutes, then straining and chilling. Add 90 ml chilled pink grapefruit juice, 15 ml rosemary syrup and 10 ml lemon juice to a large wine glass. Fill with cubed ice, stir briefly, top with 90 ml cold soda water and stir once. Garnish with one short rosemary sprig and one thin grapefruit half-wheel.
Glassware
Large wine glass with cubed ice

History
Grapefruit-and-rosemary spritzes are documented in contemporary recipes, including versions offered with sparkling water or alcoholic prosecco. This Mixology specification uses only soda water, with no balsamic or wine. The sources reviewed do not establish a first inventor of the pairing or of this exact formula.
Mixology View
A seven-minute rosemary infusion is an editorial reproducibility standard, not a claim of optimal flavour. The spritz should read citrus-first with rosemary in the aroma; it has not been tasted.
