Cocktail recipe

Air Mail

Rum, honey and lime catch a sparkling tailwind.

Air Mail cocktail

Ingredients

  • 45 ml (1½ oz) aged light rum
  • 15 ml (½ oz) fresh lime juice
  • 15 ml (½ oz) honey syrup (1:1)
  • 60 ml (2 oz) chilled brut sparkling wine
  • Garnish: lime twist

Preparation

Dissolve the honey into syrup before starting; raw honey will seize against cold spirits. Shake rum, lime and honey syrup over ice, strain into a narrow ice-filled Collins glass, then pour in well-chilled brut sparkling wine. Lift once with a spoon and finish with a thin lime twist.

Glassware

Collins glass with fresh cubed ice

History

The Air Mail belongs to the era when flight and overseas postal service became modern glamour. The drink was publicized in mid-century American cocktail writing, including *Esquire’s Handbook for Hosts* (1949), although accounts of earlier Bacardí advertising and a 1941 publication complicate the frequently repeated “invented in 1949” claim. No individual inventor is securely established. Its rum, citrus, honey and Champagne structure sits somewhere between a Honey Bee and French 75. Champagne is a traditional premium option; dry sparkling wine is our practical house choice.

Mixology View

The name promises lift, and the drink should deliver it: brisk lime, enough honey to cushion, bubbles that remain lively.
