Bellini
Description
Created in 1943, at Venice's renowned Harry's Bar this aperitif is in honor of the Venetian painter Giovanni Bellini.
Ingredients
1        Peach - Whole
6 oz      Champagne
1 dash      Juice - Lemon
1 dash      Juice - Black Currant
1        Peach - Slices
Instructions
Peel, pit and puree the peach (use Peach Nectar instead of puree). Pour puree into a chilled champagne flute, and then add lemon juice. Add a dash of black currant juice or grenadine for color. Slowly adding champagne or chilled sparkling wine (dry), stirring gently.
Garnish with peach slice.
